Magazine Monday #53: Pancakes!

Our MM hostess, Ivonne of Creampuffs in Venice, commented recently that I should be on Canadian Living's payroll, since my MM posts predominantly come from Canadian Living Magazine. And you'll probably see even more CL recipes on here, now that Gourmet is defunct.

So, what's on the menu for today's MM? Well, how about pancakes? I made this recipe from the July 2009 issue of Canadian Living: Lemon Ricotta Pancakes (without the compote included in the recipe - I'd rather have maple syrup, thank you very much). Instead of blueberries, I used some of my locally-foraged huckleberries.

These were delicious - light and airy and cakey. Perfect! The recipe made way more that one lone coyote could eat on her own, so I took the leftovers to my brother, who gladly ate them up.

A recipe for the "keeper" file for sure!

Foraged berries WC ! That's soooo wonderful. I would love to trade life in the city for that gorgeous country side you live in. Grass is always greener on the other side : ) ...

The pan cakes are lovely and look fit for publishing in Canadian Living magazine! Totally agree with you on the maple syrup...I am very fixed in my ways and can't have them with anything else.

Wis I could get some huckleberries, this looks fantastic. I love cooking light so I look forward to seeing what you make.

They are so light and fluffy looking! Blueberry pancakes are my fave, I am sure I would love huckleberry just as much.. I hope to try some one day.

You should TOTALLY be on the CL payroll! Another winner! I made pancakes with ricotta for the first time last year and fell in love. These are GORGEOUS!

I LOVE pancakes...we cxalled them flapjacks when I was growing up....can't get enough but that may be because we don't have them often.

Doug and Tristan like waffles better. These are good looking.

Holy crap girl these look awesome! I love the Canadian Living website. Since it lets me save stuff to a recipe box, I'm gonna be frequenting it! It's a great all-around resource, too.
