Huckleberry Time!

On Saturday, I got to go out into the bush and pick huckleberries. You can read more about that here.

I got 10 cups of huckleberries! So, now what? Well, yesterday morning I made huckleberry pancakes, using Nigella's homemade pancake mix. The pancakes were totally excellent and I still think this recipe makes the best pancakes I've ever had.

So, now what do I do with all these other remaining huckleberries? Yeah, there's muffins and pies...But I want to do something different.

Hucklberries are quite tart in comparison to blueberries. I'm thinking goat's cheese; I'm thinking pork loin; I'm thinking spinach!

Any ideas? Let me know!

I'm afraid I can't help you. I've never tried Huckleberrys. The only think I know about the word is Huckleberry Hound.

10 cups? Wow, that is a bumper crop. Glad you got out before the storm - you definitely do not want to be in the woods during a thunderstorm!

Coyote, you seem to be getting comments but no suggestions. Possibly a glaze for the pork loin (1/4 cup), or even making a jam that you can make a BBQ sauce with (1/5 cup). But that still leaves you with 8 more cups of berries...

The internet is an amazing place. with a simple google search, you can find information that once would have cost you 1/2 a pack of cigarettes and your honor.

Looks like you should have everything you need in a moderately well stocked pantry, except possibly a tube sock to strain the wine prior to serving.

Oh wait, I forgot, you are not a drinker... Maybe an English Trifle instead.

But, challenge yourself, get out of your comfort zone. We all would prefer you to make the prison toilet wine.

I've never even seen huckleberries! You have given me pancake envy, I'm soooo terrible at making them. I'll have to try this recipe!

My gramma had a huckleberry bush in her backyard when we were growing up, and I used to LOVE picking them. They are so good! I can never find them now!

Oh damn...I love panckes soooo much. Sunday morning I made sour cream banana panckaes and that was good. Yours look great.

I'd love to give you ideas, but I've never had a huckleberry. I'd love some of those pancakes though, they look awesome!
