I do enjoy chicken & rice soup, so this is what I decided to make with one of my carcasses the other day. And it was pretty good, I must say - way better than the canned crap.
1 litre chicken stock using a chicken carcass
1 cup chicken breast, chopped
1 onion, chopped
1 carrot, chopped
1/4 cup chopped cilantro
juice of 1/2 lemon
1/4 cup long grain rice (I used jasmine as that's what I have on hand)
freshly grated garlic, to taste
salt & pepper to taste
Bring stock to a boil, and onion & carrot. Add chicken, lemon & rice. Simmer until rice is tender. Season to taste. Add garlic & simmer a few minutes. Add cilantro last. Serve.
Seriously, it was that easy!

Nothing like soup to warm the toes on days like this...although it seems to be warm, where is the snow...not that I am complaining:D
Bring on the soup! Especially when it's as tasty as this one. I save all the bones too, although it takes me a while to amass enough for a pot of stock.

It would be pretty hard to get souped out this time of year, IMO. It sounds awesome, love the lemon in there.

mmm...you know I'm a soup person...and the cilantro is a great twist..
I make chicken soup at least once a month through the winter...
I see a version with cilantro in my near future...

Nice classic soup! It serves as the downfall of chicken, it should have evolved into something that didn't taste as good in so many dishes, ha ha.
