Blueberry Oatmeal Muffins
2 cups flour
1 cup oatmeal
1 cup packed brown sugar
1 tbsp lemon zest
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/4 cups buttermilk
1 egg
1/3 cup butter, melted & cooled
2 tsp vanilla
1 1/2 cups blueberries, fresh or frozen
Combine dry ingredients in large bowl. Combine wet ingredients in a small bowl. Make a well in the centre of the dry ingredients and add the wet until just combined. Fold in the berries. Scoop & bake @ 350F for 25 - 30 minutes or until done.
