Magazine Monday #26: Coffee Crunch Squares

I don't drink coffee, but I do enjoy baking, sweets, and drinks that are flavoured with coffee, and when I saw this recipe in the Feb. 2009 issue of Bon Appetit (my last issue, as I've decided to let this subscription go - at least for now), it really appealed to me. I also had all of the ingredients on hand and it looked simple enough.

I didn't pat this into at 12" square on a rimmed baking sheet, as the recipe indicates; I pressed the dough into a 9x13" baking pan and baked it for about 40 minutes. My dough also didn't come together very well, so I added some vanilla to bind it and this worked fine.

The result: very strong coffee flavour, but very good. Although I didn't do this, I think these would be wonderful served warm with some vanilla ice cream.

This recipe is a keeper!

    I'll have to pull out my Bon Appetit and try this with your suggestion of ice cream along side. :)
