I made english muffins for Christmas breakfast a few times, too. I used open ended tuna cans to shape them and cooked them in the electric frying pan. They were easy to do and tasted much better then store bought- like most other store bought baking.Tonight I met a new colleague who had a wedding cake making business in Ottawa before coming here to work. Glad you liked it.<BR/><BR/>I made a batch the day you did, only I used some whole wheat flour and the dough hook on my Kitchenaid mixer just to see what would happen. I ended up with bread dough, too, instead of thick batter as I used more flour I think. Got the denser bread. It's hard for me stop adding flour and leave the dough more like a batter but I think that's why my first batch was more like English muffins. I have a hard time with the 'spoon it into the pans' part because I make bread often enough to find it contrary. Next time I make it I'm going to try a gooier batter and see what happens. I'll let you know. Oh, the whole wheat with the white flour worked fine, too. I gave my folks a loaf and they loved it.<BR/><BR/>Nice of you to share with your new mommy friend.
