Essentially, food is meant to be enjoyed both visually and by taste and deconstruction just creates some confusion with both. Key Lime pie is one of my faves too and it's never going to be the same as a green blob. Thanks for the great review...I think I'll pass on this cookbook. I just bought one a few weeks ago and sure enough... just one recipe. Better than nothing I suppose.<br /><br />I don't understand deconstruction of dishes. Putting all those things together (eg: chicken pot pie) are what makes that sort of dish so yummy. Seperate them and ... blah.<br /><br />The food to table concept is wonderful but I find that here too much of what we here "food wise" is, as you pointed out too "chi-chi".
