I'm asked to make it every year for various family holiday gatherings. I love yours! I'll have to add it to my recipe box.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-10509532.post-77004685425851157362007-02-11T16:23:00.000-08:002007-02-11T16:23:00.000-08:00Ihave got to get my oven fixed!Ihave got to get my oven fixed!greatwhitebearhttps://www.blogger.com/profile/08448430897774991335noreply@blogger.comtag:blogger.com,1999:blog-10509532.post-1164248147825956392006-11-22T18:15:00.000-08:002006-11-22T18:15:00.000-08:00UB and WC - over the years I've found the best way...UB and WC - over the years I've found the best way to deal with the shrinkage problem is chill, chill, chill. I put the container and blades of the food processor along with the floor and butter into the freezer for 30 minutes or so before making a dough. Afterwards I refrigerate for at least an hour if not longer. Chill and rest - those are the keys. It's gluten formation that causes the shrinkage, so work it as little as possible, chill it and rest it.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-10509532.post-1163794527735485542006-11-17T12:15:00.000-08:002006-11-17T12:15:00.000-08:00UB: I did make this dough in a food processor and ...UB: I did make this dough in a food processor and I gave it lots and lots of rest. I thought the key to shrinkage was to have a well-chilled dough, but that certainly wasn't the case here. Other than chilling, I'm not sure what to do with pastry dough to prevent shrinkage...Wandering Coyotehttps://www.blogger.com/profile/01478039463695542535noreply@blogger.comtag:blogger.com,1999:blog-10509532.post-1163791479111545722006-11-17T11:24:00.000-08:002006-11-17T11:24:00.000-08:00Hi WC, Did you use a food processor for your dough...Hi WC, <BR/>Did you use a food processor for your dough? Shrinkage drives me nuts. I find if I rest the dough it helps. Although I never plan far enough in advance to do so! Its usually - I want pie, (or cake or pizelle or some ridiculous, none last minite thing, NOW). Do you have any other tricks for shrinkage?Underground Bakerhttps://www.blogger.com/profile/17264338355668672900noreply@blogger.comtag:blogger.com,1999:blog-10509532.post-1163707066874675662006-11-16T11:57:00.000-08:002006-11-16T11:57:00.000-08:00I like the sounds of that combination, mmmm macada...I like the sounds of that combination, mmmm macadamia and coconut....Brilynnhttps://www.blogger.com/profile/14417842674245229914noreply@blogger.comtag:blogger.com,1999:blog-10509532.post-1163663396295367752006-11-15T23:49:00.000-08:002006-11-15T23:49:00.000-08:00This looks fantastic! This looks fantastic!Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-10509532.post-1163426503311787712006-11-13T06:01:00.000-08:002006-11-13T06:01:00.000-08:00Mmmhhh, that looks delicious!
