Orange Oat Cookies

I am obsessed with citrus flavours. I love lemon, grapefruit, and things that are flavoured with orange. I don't actually eat whole fresh oranges except at Christmas when we get the Mandarin oranges in. But I do love the flavour of orange. This is a cookie recipe that's come to be very popular amongst the staff where I'm working.

Orange Oat Cookies

1 cup oats
1/2 cup butter
1/2 cup granulated sugar
1/2 cup lightly packed brown sugar
1 egg
1 tbsp orange zest
1 tsp vanilla
3/4 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3/4 cups coarsely chopped pecans or walnuts

Preheat oven to 350F. In a shallow baking pan, spread out the oats and toast them for about 10 minutes, stirring occasionally. Cool completely. Cream together the butter and the sugars with a mixer, adding the egg, zest and vanilla. Craem until light and fluffy. Combine flour, salt, soda, powder and add to the creamed mixture, beating at low speed until well blended. Add oats and nuts. Mix well. Drop by tablespoonfuls onto an ungreased baking sheet and bake for 9 - 12 minutes, or until golden brown.

looks great. i think my husband would flip for this. i'm all for chocolate-flavored sweets, and he loves anything that is fruity or citrus-flavored.

I tried this recipe myself, and apart from the addition of about an entire cup of loose cat hair, it turned out delicious. You see, after I left out the freshly baked cookies to cool, my little monster furball decided that that would be a good place to stretch out and warm his furry ass. I came back inot the kitchen a half hour later and there he was...laying on top of my plate of warm Orange Oat cookies.

these look and sound great, but as it's running 90+ degrees with 80% humidity, hopefully you'll forgive me if I wait a month or so to try these!
